We hold these truths to be self-evident. Distilleries are not created equal, nor is the whiskey that flows from them.
Dingle Whiskey is a product of its environment. From the localised well water to the immensely manual mashing, alongside the wooden fermentation vessels that feed into the three bespoke copper pot stills, the production is purely Dingle. The micro climate then creates a maturation like no other. We do not manipulate the course of our whiskey, only nature can do that.

Dingle Distillery’s hugely anticipated Core Single Malt release is finally upon us and is here to stay.
This Core Single Malt release has been years in the making and comprises of malt whiskey that has been matured in ex-Bourbon, and PX sherry casks. 39% Bourbon, 61% PX Sherry.
Bottled at 46.3% and non-chill filtered. This is a very interesting whiskey in which the component casks come to the fore at different stages.
The Dingle Distillery released its first whiskey for market in November 2016. Distilled from distinctive, hand crafted copper pot stills and matured in Bourbon casks, two new whiskeys Dingle Whiskey (46.5%, 7,500 bottles) and Dingle Whiskey Cask Strength (60.7%, 500 bottles) were presented in bespoke bottles featuring a painting by Liam O’Neill, commemorating the 100th anniversary of the 1916 rising. Batch 1 had an aroma of vanilla, almonds and cereal sweetness. A clean flavour with sweet with notes of marzipan, vanilla and hay, finished with a pleasant dryness and hints of aniseed and liquorice.
Dingle Whiskey Cask Strength recently won the Gold Medal at the Irish Whiskey Awards 2016.

This cask strength limited edition release of our Batch No. 2 whiskey reflects the original flavour of the Single Malt whiskey matured in Bourbon, Oloroso and Pedro Ximinez Casks before the reduction in ABV. The significance in 500 bottles is a nod to, and reflects our Founding Fathers all across the world. It is at this strength where the flavour profile shows the true extent of this whiskey.
DINGLE SINGLE MALT WHISKEY BATCH NO.3
Created by the marriage of meticulously selected casks, both Bourbon and Port, this single malt Irish whiskey is a small piece of history, unique and rare. Batch No. 3 is a limited release of 13,000 bottles at 46.5% and 500 bottles at Cask Strength. It is a marriage of Bourbon and Port casks. A burst of blue/black fruits on the nose forms a tart almost jam like sweetness on the palate with some subtle notes of citrus peels, the liquid coats the mouth like warm honey, mixed berries and marmalade linger on the tongue

This marriage of Bourbon, Sherry and Port casks has resulted in a full flavoured, yet harmoniously balanced mix of creamy vanilla sweetness from the American oak, which combines beautifully with dried fruit flavours of apricot and sultanas from the fortified wine casks.

DINGLE SINGLE MALT WHISKEY BATCH NO.5
Bringing this marriage of Bourbon, Pedro Ximénez and Madeira casks together has allowed the Bourbon casks to release a warm aroma of spices. Creating a unique single malt Irish whiskey bombarding the senses with molten honeycomb and salted caramel. While the Pedro Ximénez and Madeira casks combine beautifully to bring sun-dried raisins forward, scented with creamy blossom honey and saturated with vanilla. This is a wonderfully warm, lingering and mellow whiskey.

This cask strength limited edition release of our Batch No. 5 whiskey reflects the original flavour of the Single Malt whiskey matured in a marriage of Bourbon, Pedro Ximénez and Madeira casks. DINGLE SINGLE MALT WHISKEY BATCH NO.6
This is the sixth and final release of this Dingle Single Malt Batch series . Some 15,000 bottles of the liquid have been produced with an all-Port maturation and with an additional 1,000 Cask Strength bottles.
Nose – The Port casks deliver a wonderful intensity. Maple syrup, thick cut marmalade, butterscotch, and crystallised ginger.
Taste – Full on fruit and spice. Waffles laced with syrup, redcurrant jelly, crushed cranberries, gingerbread, and dark chocolate.
Finish – Lively with an increasing sweetness. Ginger spice and honeyed dates come to fore.

This cask strength limited edition release of our Batch No. 6 whiskey reflects the original flavour of the Single Malt whiskey matured exclusively in Tawny Port casks. Just 1,000 bottles of this Cask Strength whiskey were created.
DINGLE SINGLE POT STILL
Matured exclusively in Pedro Ximenez Casks. This small batch release single pot still Irish whiskey has come into being through the marriage of carefully selected casks. Their former role in the maturation of Pedro Ximenez sherry is reflected in the colour, aroma and character of this unique whiskey. Complex, long and vinous, it has notes of dried fig and candied citrus peel with a suggestion of warm winter spices and plum pudding.
DINGLE SINGLE POT STILL SECOND RELEASE
It is full of spice and quite sweet on the nose. The pot still oils carry a lively mix of rich sweetness and peppery spice. These rich spry flavours bristle across thetongue,dark chocolate, dried fruits, some biscuit and hints of ginger, raisins and salted caramel and last on the palate long after the liquid is gone.
DINGLE SINGLE POT STILL THIRD RELEASE
This small release single pot still Irish whiskey has come into being through the marriage of carefully selected bourbon and port casks. Each cask is distilled and matured in Dingle where the intrinsic elements of its coastal location create a distinctive whiskey with handmade character.
Intense freeze dried berry fruits combine with a hint of chilli infused dark chocolate to provide a luxurious texture. Full bodied and well balanced. A warm and long finish. Treacle toffee laced with ginger dissolves slowly on the tongue. Wonderfully moreish.
DINGLE SINGLE POT STILL FOURTH RELEASE
This fourth, small batch release of Single Pot Still Irish Whiskey brings this marriage of Bourbon and Oloroso casks together with an intense richness and a rush of spice. Tones of dark fruits and figs are followed by dark chocolate with a sprinkling of roasted, chopped nuts. The chocolate gives way to returning spice of soft wood and leather notes which glide you into a long, memorable finish.
DINGLE SINGLE POT STILL FIFTH RELEASE
The fifth and final release of the small batch single pot still whiskey series from Dingle Distillery. Matured fully in Bourbon casks resulting in a rich smooth whiskey. Tones of dried raspberries and butter mints are followed by white chocolate with a sprinkling of flaked almonds. The chocolate gives way to that returning Dingle spice of soft wood and leather notes which glide you into a long, memorable finish.
